Re-opening: Have you considered changes to bulk food production in your policy documentation?

Bulk food production and delivery, including packed lunches, food parcels and hampers, have become a new normal in our food operations.

Food safety and policy remain papramount, especially in a pandemic. So what is the Red Box advise surrounding this kind of operation?

Staff should aim for a 2m separation between each other for all operations. Where a 2m separation cannot be achieved, staff should maintain a distance of separation between each other as far as is reasonably practicable within the working environment. Direct physical contact should be avoided and thought should be had as to how distance can be maximised in the catering areas when carrying out tasks including bulk production of packed lunches, parcels and hampers.

Vehicles used for work purposes should be used wherever possible by single persons and cleaned regularly after use that day and before being used by another person. All contact points including handles, steering wheels, levers, gear sticks etc must be cleaned using spray sanitiser, being careful not to damage electrics or cause safety risks with electrics. Transportation should be kept to a minimum and external ventilation should be considered whenever possible by opening windows.
